Ingredients

  • 9 oz dry spaghetti (250 g)
  • 1 small fresh tomato diced finely
  • ½ small onion
  • 2 small garlic cloves
  • 1 tbsp spicy harissa paste
  • 1 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tsp dried herbs
  • salt

Instructions

  1. Peel the raw onion and the garlic cloves. Then slice them up roughly. Pour the olive oil in a large non-stick frying pan and add the sliced garlic.

  3. Place the pan over medium heat until the oil is hot and gently fry the garlic for 2 minutes. Don’t burn it. Then add the sliced onion to the pan.

  5. Stir well and let the onion and garlic bake for 5 minutes until translucent but still somewhat crunchy. Then add the spicy harissa paste.

  7. Stir the onion well and add half a cup (120 ml) of water. Also add the dried herbs, the red wine vinegar and a pinch of salt.

  9. Stir the onion well and turn the heat lower. Put a lid on the pan and let the onion simmer in the harissa sauce for 8 to 10 minutes. Stir regularly. In the meantime fill a large and high pan with water and add a pinch of salt to it. Place it over high heat until boiling. Then add the spaghetti to it.

  11. Cook the spaghetti until tender and then drain it. Add it to the harissa and onion sauce. Stir well and check the seasoning. Add extra spicy harissa or salt to taste if necessary. Then scoop the pasta onto plates and finish with the finely diced ripe tomato. Serve hot.
