Ingredients

  • 1 lb fresh spinach (450 g)
  • 1 ½ sesame seeds (45 g)
  • 2 handfuls ice cubes
  • 2 tbsp fish sauce
  • 2 tsp soy sauce
  • pepper
  • salt

Instructions

  1. Prepare the ice water: fill a bowl with cold water and add the ice cubes. Then place the bowl in the fridge 30 minutes before you make the spinach salad. Add the sesame seeds to the bowl of the Cook Processor fitted with the MultiBlade.

  3. Close the bowl and then press Pulse for 2 minutes. In the end the sesame seeds should be very fine, more like flour.

  5. Pour the sesame in a clean ramekin and clean the bowl with a kitchen towel. Rinse the spinach and place it in the large steamer basket.

  7. Pour 2 cups (480 ml) of water in the bowl and place the steamer basket on top. Close it. Then select STEAM P1 and press Start to activate the program. Once done, immediately remove the spinach from the basket and let it cool in the ice water.

  9. Empty the bowl of the Cook Processor and wipe it dry with a clean kitchen towel. Once cooled, gently squeeze the spinach and chop it up roughly. Add it to the bowl of the Cook Processor fitted with the StirAssist. Also add the fine sesame, the fish sauce, a tablespoon of water and the soy sauce. Season with a pinch of pepper and salt.
