Ingredients

  • 2 fresh chicken breasts
  • 10 cherry tomatoes
  • ½ cup chicken stock (120 ml)
  • ¼ red wine vinegar (60 ml)
  • a handful fresh tarragon
  • 4 tbsp olive oil
  • pepper
  • salt

Instructions

  1. Season the chicken breasts on both sides with pepper and salt.

  3. Pour the olive oil in a medium non-stick pan and place it over high heat. Once the oil is hot, add the chicken breasts.

  5. Then sear the chicken breasts quickly in the oil for 4 minutes until nicely golden brown on one side.

  7. Flip the chicken over and bake the other side for 3 more minutes. Then transfer the breasts to a baking dish.

  9. In the same pan you just baked the chicken in (don’t wipe it clean!) pour the water and the red wine vinegar. Turn the heat lower to medium.
