I love fresh baby artichokes…
But here in Spain they are hard to find.
I only saw them in the bigger fresh food market up north in the capital. Because of that I made these artichokes in oyster sauce using frozen ones. And I must say that those are actually of very good quality!
Or they wouldn’t end up in my freezer of course.
Easy Artichokes in Oyster Sauce with Ginger
I have prepared artichokes quite a couple of times before.
But this version with oyster sauce is yet another great artichoke recipe! It is ready in just a couple of minutes, a perfect side dish for pork or beef if you ask me…

Easy Artichokes in Oyster Sauce Recipe
A little fusion cooking in your kitchen tonight: artichokes in oyster sauce and ginger, a powerful side dish for pork or beef!
- 10,5 oz frozen artichokes (300 g), thawed
- 1 small shallot
- 1 small garlic clove
- 2 tbsp toasted sesame oil
- 1- inch fresh ginger (2,5 cm)
- 1 tbsp oyster sauce
- 3 tbsp fresh cilantro chopped
- 1 tsp fish sauce
- 1 tsp sesame seeds
- pepper
- Slice the thawed artichokes in half and let them drain a little on some kitchen paper for 5 minutes. This will remove any excess water and make the artichokes fry easily.
- Peel the shallot, the garlic clove and the piece of fresh ginger. Chop them all up. Then add this together with the sesame oil, oyster sauce and the artichokes to a large non-stick frying pan. Season with a pinch of pepper
- Place the pan over medium-high heat until the oil is hot and fry the artichokes golden for about 6 to 7 minutes. Stir regularly. Then drizzle with the fish sauce and a tablespoon of water. Also add the freshly chopped cilantro.
- Stir the artichokes well and reduce the heat to medium. Cook the artichokes for 4 more minutes. Then check the seasoning and add extra pepper or fish sauce to taste if necessary. Transfer the artichokes to a serving bowl or plate and sprinkle with the sesame seeds. Serve hot.

Easy Artichokes in Oyster Sauce Recipe
- 10,5 oz frozen artichokes (300 g), thawed
- 1 small shallot peeled
- 1 small garlic clove peeled
- 2 tbsp toasted sesame oil
- 1- inch fresh ginger (2,5 cm), peeled
- 1 tbsp oyster sauce
- 3 tbsp fresh cilantro chopped
- 1 tsp fish sauce
- 1 tsp sesame seeds
- pepper
- Insert the MultiBlade into the bowl and add the peeled shallot, garlic and the piece of fresh ginger. Close the lid and press Pulse for 5 seconds. Open and scrape down the sides of the bowl.
- Replace the MultiBlade with the StirAssist. Slice the thawed artichokes in half (if you are using whole ones) and add them to the bowl together with the sesame oil, oyster sauce, fish sauce and and a pinch of pepper and 5 tablespoons of water.
- Close the lid and remove the measuring cup. Select FRY P1 and press Start to confirm. Then stir in the freshly chopped cilantro.
- Press Quick Stir for 10 seconds. Then transfer the artichokes to a serving bowl or plate and sprinkle with the sesame seeds. Serve hot.
