However I don’t have a deep fat fryer in my kitchen anymore. Because I tossed out that oily mess a couple of years ago while I was in the process of moving to the place where I live now.

Someone once asked me if they could bake these doughnuts from scratch below in an air fryer.
Honestly, I haven’t tried that. But I know that people bake lots of treats in air fryers now so I would definitely give it a try next time!

It is pretty easy actually. If you follow the recipe by the book, then you will definitely get those fluffy and light baked doughnuts in the end.
These donuts below are simply baked in the oven.
No oil and no fuss either. And no blown-up stomachs or regrets afterwards!
I love donuts to bits.
You can chill the doughy donuts in the fridge overnight (cover them with cling film) and then bake them off in a hot oven in the morning for breakfast.

Best Oven Baked Doughnut Recipe: For The Dough
Let's make this dougnnut dough from scratch first!
- 14 oz plain flour (400 g)
- ⅔ cup whole milk (160 ml), warm
- 1 ¼ tsp active dry yeast
- ⅓ cup caster sugar (75 g)
- 1 medium egg lightly beaten
- 1 tbsp unsalted butter
- salt
Add a few tablespoons of the warm milk to a small cup and stir in the yeast.
- Put this mixture aside for 10 minutes. Melt the butter in the remaining warm milk.
Then add the flour, sugar and beaten egg to a blender. Season with salt.
Blend a few times and then add the buttery milk.
- Pulse again and then add the yeast milk.
- Blend into a wet dough.
- Transfer the dough onto a lightly floured surface and knead it for 2 minutes. Shape it into a little ball and place in a lightly oiled bowl or dish. Cover with a clean kitchen towel and let the dough rise in a warm place until it has doubled in volume. This will take about 2 hours.

- plain flour for kneading and rolling
- 3 oz unsalted butter (80 g), melted
- 5 tbsp caster sugar
- 1 tsp ground cinnamon
Knead the dough again for a minute and roll it out until it is about ½-inch (1,3 mm) thick.
- Cut out even circles (use a serving ring or a glass) and remove the centers using a smaller diameter ring or glass. You can bake the donut holes separately or make a new dough ball from the remaining dough and cut out more donuts.
- Place the donuts on a sheet of baking paper and let them rise for another 30 minutes in a warm place.
Bake the donuts in a preheated oven at 375°F (190°C) for 8 minutes. Don't overcook them or the center will not be light and fluffy!! Remove the freshly baked donuts from the oven. Decorate them the way you like: melted chocolate, icing sugar, chocolate sprinkles… I brushed mine with some melted butter (do this while the donuts are still hot) and dip them in a mixture of caster sugar and cinnamon.

2. Close the lid and select Dough P1. Press Start to select Step 1 and press Start again to activate the program.
3. After that, also add the flour, sugar and beaten egg to a blender. Season with a little pinch of salt.
4. Close the lid again and press Start to activate Step 2.
5. Then check the dough after that. It should be a moist dough.
6. Close the lid and adjust the time to 2 hours (instead of 30 minutes) Then press Start to activate Step 3. This will let the dough rise for 2 hours. After that it should have doubled in volume.

A single deep fried donut typically contains around 240 to 340 calories.
One single oven baked donut typically has around 100 to 150 calories.
But why is that exactly?
Because deep frying adds more calories to food because the food is cooked in oil, which is a high–calorie substance. The oil penetrates the food, adding more fat and calories.
Depending on what topping you add, that calorie count will go up even more. Chocolate frosting is typically the donut topping with the most calories.
