I bet that you have a couple of ripe bananas in your fruit basket from time to time.
And you sure want to use them up now because they do tend to get too ripe in a blink of an eye.
Which is too bad because I really hate it if I have to throw away food. Why not prevent that from happening and make a delicious sweet treat instead.

It is definitely not a fluffy sugary banana cake, that is for sure. This one is more like a sneaky snack. I even spread mascarpone on it sometimes.

Sure!
Put a few banana bread slices in a toaster for a minute. Then spread some salted butter on it. At least that is how I like my banana bread best!

Easy Homemade Banana Bread Recipe – KitchenAid Stand Mixer Mini
Ripe bananas in your fruit basket? Then I got this perfect banana bread recipe for you!
- 2 large ripe bananas peeled and sliced
- 2 large eggs
- 6,5 oz caster sugar (120 g)
- 5,5 oz self-raising flour (180 g)
- 3 tbsp unsalted butter (45 g), soft
- 1 tbsp poppy seeds
- salt
Add the sliced banana to the bowl of the KitchenAid Stand Mixer. Attach the wire whip and lower the mixer head.
- Select speed 4 and mix the bananas for 5 minutes until you get a puree. Then add the eggs and the soft butter.
- Mix the ingredients for 2 minutes. Then add the self-raising flour and the caster sugar. Season with a pinch of salt.
- Mix the ingredients for 2 more minutes. Add the poppy seeds while the banana batter is being mixed.
- Then tilt the mixer head back up and chill the banana batter in the fridge for about 10 minutes. In the meantime butter a small baking dish.
- Pour the banana batter in the buttered baking dish and place it in a preheated over at 356°F (180°C) for 45 minutes until set in the middle. If you insert a skewer into the banana bread it should come out clean.
- Then remove the banana bread from the hot oven if the middle is cooked. Let the banana bread cool in the baking dish. Slice it up and serve.

- 2 large ripe bananas peeled and chopped
- 2 large eggs
- 6,5 oz caster sugar (120 g)
- 5,5 oz self-raising flour (180 g)
- 3 tbsp unsalted butter (45 g), soft
- 1 tbsp poppy seeds
- salt
Add the bananas and lemon juice to a blender. Blend until you get a smooth puree. If you don’t have a blender, mash the bananas up finely using a fork.
Pour the banana puree in a large mixing bowl. Add the eggs, caster sugar, poppy seeds and soft butter. Also season with a pinch of salt.
- Then gently fold in the self-raising flour until you get a silky batter.
- Chill the banana batter in the fridge for about 10 minutes. In the meantime butter a small baking dish.
- Pour the banana batter in the buttered baking dish and then place it in a preheated over at 356°F (180°C) for 45 minutes. If you insert a skewer into the banana bread it should come out clean.
- Remove the banana bread from the hot oven if the middle is cooked. Let the banana bread cool in the baking dish. Slice it up and serve.

French Banana Tart
I made pretty similar tarts like this one before using sliced pears and apples instead of bananas.
The tart base stays the same. You can make it with other fruits as well! What I like about this recipe is the amount of time you need to prepare it.
In just 1 hour you can make a beautiful fruit tart!
This type of tart it very popular in France. You can find it in pretty much every baker’s shop in Paris for instance. I especially love the apricot version.
Pink Pepper
No need to sprinkle the sliced banana with lemon juice to keep their color. The banana will turn brown anyway while baking. Nothing you can do about that.
And those pink peppercorns? Just a spur of the moment thing really, because I like their earthy flavor in combination with the sweeter banana!
But you can leave the out of course.

Easy French Banana Tart Recipe
Enjoy this quick and easy banana dessert!
- 2 large ripe bananas peeled and sliced
- 2 oz unsalted butter (55 g ), ice cold
- 3 oz pastry flour (85 g)
- 2 tbsp caster sugar
- ½ tsp pink peppercorns optional
- salt
- Add the flour, butter, a tablespoon of sugar and a pinch of salt to a blender.
- Blend until you get a dry mixture. Add a tablespoon of water. Pulse into a moist dough. Add more water if the dough is dry.
Then transfer the dough to a floured surface. Knead it for a minute. You can wrap it up, store it in your fridge and use it later. Roll out the dough thinly, about ⅕ inch (5 mm). Cut it into a nice circle using a mixing bowl or anything that fits on top of the dough. Run a knife along the side.
Then transfer the circle to a baking tray or pizza sheet.
Sprinkle with some sugar. Then top with the banana slices.
Bake the banana tart in a preheated oven at 410°F (210°C) for 30 minutes. Cover it with some tinfoil after 15 minutes to keep the edges from burning. In the meantime add the remaining sugar, 4 tablespoon of water and pink peppercorns (optional) to a small saucepan.
Boil it gently over medium heat until the sugar starts to thicken lightly into a runny syrup. Then take the pan off the heat and keep it aside.
Remove the baked banana tart from the oven and brush with the sugary syrup.
Then slice the tart up. Serve hot or lukewarm.
