Even I do that if I haven’t got enough time to make this sauce from scratch, I confess. But if I have all the necessary ingredients in my pantry, then I prefer to assemble my own yummie Spanish sauce the way I like it best!

Best Brava Sauce Recipe for Patatas Bravas
- ½ small onion
- 1 medium garlic clove
- 1 tsp paprika powder
- ½ lb canned chopped tomatoes (220 g)
- 1 tsp white wine vinegar
- 1 tsp mayonnaise
- 1 tbsp olive oil
- pepper
- salt
Peel the garlic clove and onion. Chop both finely. Add the olive oil to a small saucepan and place it over medium heat until hot. Then add the chopped onion and garlic.
- Cook for 4 to 5 minutes until the onion is starting to soften. Add the spicy paprika powder.
Stir well. Then add the canned chopped tomatoes.
- Cook for 2 more minutes. Add the white wine vinegar and season with a little pinch of pepper and salt to taste.
- Take the pan off the heat and then stir in the mayo.
- Stir the sauce well now. Let it cool a bit first and then transfer it to a clean blender.
- Pulse into a smooth and creamy sauce.
Check the seasoning again and add extra pepper, salt or vinegar to taste if necessary. Then pour the sauce in a clean serving bowl or on top of a portion of fried patatas bravas potatoes.

These potatoes are also a famous little snack in every tapas bar in mainland Spain and on every Spanish island. I visited several of these lovely cozy spots while living in Barcelona for a month. Of all the patatas bravas I ordered, none of the bravas potatoes tasted the same even though it seems to be a pretty simple dish!
Why?
Because the difference is not in the fried potatoes, but in the brava sauce.

Quite a few places use a homemade brava sauces (thumbs up, chef) because you can just taste that. The majority used store bought brava sauce (that is OK) but then the biggest lazy bums just squeeze a dollop of tomato ketchup or mayo on the plate.

Spanish patatas bravas, best recipe ever! Because these golden fried potato cubes drizzled with the creamiest brava sauce are the best you will ever taste...
- 1 ½ lbs oven potatoes (675 g)
- homemade brava sauce
- 1 cup sunflower oil (240 ml)
- salt
1. Peel the potatoes and rinse them. Then chop them up into bite-size wedges or cubes.
2. Don't make them too large! Fill a large saucepan with water, add a dash of salt and place it over high heat until boiling. Then add the chopped potatoes to it.
3. Cook the potatoes for about 12 to 13 minutes until they are nearly tender. Then drain them. Pour the sunflower oil in a medium saucepan and place it over medium-high heat until hot. Then add the cooked potatoes (in batches if necessary).
4. Fry the potatoes for 7 to 9 minutes until they are crispy, crunchy and golden.
5. Transfer them onto some kitchen paper and let them drain a little. Then scoop the fried potatoes onto a clean plate. Sprinkle with extra salt. Serve piping hot, topped of course with your homemade salsa brava sauce! Dig in...

- ½ small onion peeled
- 1 medium garlic clove peeled
- 1 tsp paprika powder
- ½ lb canned chopped tomatoes (220 g)
- 1 tsp white wine vinegar
- 1 tsp mayonnaise
- 1 tbsp olive oil
- pepper
- salt
- Add the garlic and onion to the bowl of the Cook Processor fitted with the MultiBlade.
Close the lid and press Pulse for 10 seconds. Then scrape down the sides of the bowl and press Pulse again. The onion and garlic should be chopped finely. Scrape down the sides of the bowl again. Remove the MultiBlade and add the StirAssist instead. Add the olive oil and the paprika powder. Season with a pinch of salt.
Close the bowl and select STEW P5. Press Start to activate Step 1. Then add the canned chopped tomatoes and the vinegar.
- Close the bowl and press Start to activate Step 2. After that press cancel to exit the keep warm mode. Remove the StirAssist and add the MultiBlade again. Let the tomato sauce cool for 15 minutes. Then add the mayo.
- Close the bowl and add the measuring cup. Press pulse for 20 seconds. Scrape down the sides of the bowl, close the lid and pulse again for 20 seconds or until you end up with a fine sauce. Check the seasoning and add extra pepper, salt or vinegar to taste if necessary. Then pour the sauce in a clean bowl. Serve with fried patatas bravas.
