It is a rainy February Saturday and it is almost lunchtime. What shall we have then? I take a quick look in my fridge and I can see a chunk of Italian mozzarella cheese and a couple of ripe plum tomatoes. Well it looks like we will be having a caprese sandwich for lunch!

Mozzarella cheese and tomatoes? Who doesn’t love that!
Hang on, you are right.
Some caprese salads are not good at all.
And that certainly has something to do with the quality of the ingredients that you use. Just go to your local supermarket and tell me how many types of mozzarella cheese you can find.
In my supermarket there’s easily about 10 different bags of mozzarella cheese. And it comes in all different kinds and sizes. From the large cheese balls to tiny little pebbles for salads.
And then the prices can also fluctuate.
From very cheap to darn expensive. So what mozzarella cheese do you tend to buy usually? I have bought them all I think. Which one I buy depends on the dish I want to prepare.
Easy Caprese Sandwich with Mozzarella Cheese
Am I making a fresh caprese salad?
Then I will go for the most expensive fresh mozzarella, I will even use burrata if there’s any! But for a sandwich that you have to grill? Or mozzarella for a pizza? Then go for a cheaper mozzarella cheese.
So I initially wanted to make a caprese salad but I didn’t have enough of the mozzarella cheese to back up the tomatoes. And then the mozzarella cheese that I had was not the best quality, more like the cheaper mozzarella for oven au gratins and pizzas.
For this caprese sandwich I grilled the cheese and the tomatoes just until the cheese starts to melt a little.
Drizzle of balsamic vinegar on top, sprinkle of fresh basil. It was a little ray of Italian sun on a rainy February afternoon.

Easy Caprese Sandwich Recipe
Mozzarella cheese and tomatoes in my fridge: looks like we’re having a caprese sandwich for lunch! This classic Italian combo is such a great treat.
- 2 bread rolls
- 3,5 oz mozzarella (100 g)
- 1 medium fresh tomato
- a handful fresh basil
- 1 tsp balsamic vinegar
- ½ tsp dried herbs
- olive oil
Dice the tomato up into small chunks and then add them to a medium mixing bowl. Sprinkle with the dried herbs and a little olive oil. Season with some pepper and salt.
Stir well. Dice the mozzarella cheese as well and add it to the tomato.
Stir the tomato and mozzarella cheese well. Then slice up some fresh basil and add it. Also add extra pepper or salt to taste.
Slice the bread rolls in half lengthwise and top 2 halves with some fresh basil leaves. With a tablespoon place the tomato and mozzarella cheese salad on top of it.
Place the sandwiched under a hot grill for some minutes until the mozzarella cheese starts to melt. Then remove them, place the grilled halves on clean plates and drizzle with some balsamic vinegar. Cover with the other bread halves and serve warm.
