Do you visit my website often?
Perhaps you follow me on social media?
Well then you will know that I am not much of a baker. When it comes to kitchen experiences and challenges, baking is not something I do very often. And yes, I am more a salty tooth than a sweet tooth…
Baking at Home
But that doesn’t mean that I say no to desserts and sweet treats!
On the contrary.
I love to kick off afternoons in our sunny garden with a good cuppa. Or on the couch under a warm blanket it the winter. My go to treats: either a homemade pie, or classic chocolate chip cookies!
It is weird though, that I only recently started baking chocolate chip cookies.
Why?
Guest Post
Before I seemed to never get them right.
My chocolate chip cookies were ugly, either too chewy or rock hard and the texture was off quite a lot. I stopped baking them for a while.
I was so disappointed.
Up until the moment I got into contact with Karen Rutherford behind CakeDecorist.com. She is a very talented baker and she offered to write down a couple of tips to make me love baking chocolate chip cookies again.
Hence this lovely guest post!

The Best Chocolate Chip Cookies: 5 Tips
The best chocolate chip cookies?
It is no easy feat to achieve as there are many things that can go wrong in the process. And, although they may still be good enough to eat, they may not always be the best you can make.
Today we are going to go over some helpful tips that will make your chocolate chip cookies infallible.
Remember, though, that if you are having difficulties with flat cookies you can check out this article and troubleshoot your way into an amazing cookie.
Tip 1: Melt your butter only halfway
This may seem like an odd choice.
But believe me when I tell you this tip will help you achieve the best cookies. In my opinion, this is usually a combination of soft centered but structured cookies, that have a crispy outer layer.
Leaving half to ¾ of the butter you are using unmelted will make your batter the perfect consistency. To achieve this, you can avoid the microwave. It will leave your butter too soggy and soupy, even if not melted all the way.
How do I do it?
I prefer to take advantage of the oven while it is pre-heating. It is a risky business, though. Set a timer so that you do not forget about it and completely melt it away!
Tip 2: Hot butter is a no-no
You may think that because our butter is melted we need to use it right away. That is actually a big mistake!
Not just for making cookies but whenever you need melted butter, it is best to bring it back down to room temperature. This will not solidify the butter, but it will make it a bit stiffer, although still runny.
This, again, will aid in the final texture of your batter.
And believe you me, hot butter will only make it harder to work with!
So be patient and wait until it is at the same temperature as the rest of the ingredients.
Tip 3: Over beating the egg
Do you like soft-centered chocolate chip cookies like me?
Then you need to be very careful for how long you beat your egg (or eggs). You need to do it just enough! If you over-do it, then your cookie will be harder and stiffer.
Tip 4: Use different kinds of chocolate chips
Even if you are partial to one chocolate kind or other, I recommend you try and mix semi-sweet with milk chocolate. The different levels of sweetness will work together great!
You can even go crazy and add some other types of chocolate in smaller amounts, like white, ruby or golden chocolate. You can even try with chili chocolate or sea salt chocolate.
Experimenting is the key until you reach the mix that makes your mouth water the most.
You can also change up the texture with different sizes of chocolate chips. Adding different textures to your cookie will make them memorable, at least in my opinion.
Just also adding more chocolate, in general, is a great idea.
You can never have too many chocolate chips. Remember to always place some extra chips on top of your chocolate chip cookies before baking them to achieve a great Instagram-worthy moment.
Tip 5: It needs a bit more flour
Adding too much flour to a cookie recipe is dangerous.
They can always turn out very stiff and hard. But adding too little flour can also be keeping you from reaching cookie perfection.
The rule of thumb is to forget about the recipe and go by feel.
How does the dough look like? It needs to pull away from the sides of the bowl. If it is not there yet, try adding a spoonful of flour at a time.
Keep going until it does!
