Let’s think of another version of hummus we can make!

So I have this large bunch of fresh cilantro on my kitchen counter right here.

I know, quite a lot of people seem to hate cilantro. I am not one of them however. Are you? Cilantro is such a refreshing flavor if you ask me.

Easy Lemony Cilantro Hummus with Lemon
Gosh I love the fresh and bright green color of this dip.
You would think at first that it is a kind of pesto but then the flavor explosion is such a sweet surprise: it is fresh, zesty, bright, light and so pure!
Hang in there though, because it takes a few minutes to really get that fresh green color from the cilantro mixed into the chickpeas.
So don’t give up too soon!
Blend Well
All in all I think I blended the hummus for like 6 to 8 minutes, easily.
But the reward is right there because in the end you will get a brilliant and healthy dip. And I am sure that you will love it.

Easy Lemony Cilantro Hummus Recipe
This creamy green cilantro hummus has it all: it's fresh, zesty, bright, light and so delicious!
- 1 large handful fresh cilantro
- 7 oz canned chickpeas (200 g), drained weight
- 1 medium garlic clove
- 1 tbsp toasted sesame oil or tahini sesame paste
- good-quality olive oil
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- ground cumin
- pepper
- salt
Peel and slice the garlic clove. Add it to a non-stick pan with some olive oil.
Place the pan over medium heat until the oil is hot. Gently fry the garlic for 4 minutes. Then add the drained chickpeas.
- Stir and take the pan off the heat. Let the garlic and chickpeas cool for a couple of minutes. Then pour it all in a clean blender.
- Pulse the chickpeas for 2 minutes. Scrape down the sides and pulse again. Then add the fresh cilantro, the lemon juice and zest and half of the sesame oil or paste.
- Pulse again for 2 minutes. Add 2 tablespoons of olive oil and 2 tablespoons of water. Season with a pinch of pepper, salt and ground cumin.
- Pulse the chickpeas again for a while until that greenish color takes over the beige chickpea color (takes a couple of minutes). Then add extra olive oil or water, pulse again until you get the consistency you like. Check the seasoning and add extra pepper, salt, sesame oil (or paste), lemon juice or ground cumin to taste if necessary.
- Scoop the hummus in a clean bowl, cover with some cling film and let it chill and set in the fridge for 30 minutes. Then let it rest again at room temperature 15 minutes before serving.

Flavor bomb! This creamy green cilantro hummus has it all: it's fresh, zesty, bright, light and so delicious!
- 7 oz canned chickpeas (200 g), drained weight
- 2 large handfuls fresh cilantro chopped roughly
- garlic powder
- 1 tbsp toasted sesame oil or tahini sesame paste
- good-quality olive oil
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- ground cumin
- pepper
- salt
- Insert the MultiBlade into the bowl. Add the canned chickpeas and close the lid.
- Press Pulse for 10 seconds. Open the lid and scrape down the sides of the bowl. Season with a pinch of pepper, salt, garlic powder and ground cumin. Add the lemon juice and zest, the sesame or (or sesame paste), 5 tablespoons of olive oil, 3 tablespoons of water and the roughly chopped fresh cilantro.
- Close the lid again and select PUREE P1. Press Start to activate the program. Once done, press cancel to exit keep warm mode. Scrape down the sides of the bowl again. Close the lid and press Pulse for 30 seconds.
- Then add extra olive oil or water, pulse again until you get the consistency you like. Check the seasoning of the hummus and add extra pepper, salt, sesame oil (or paste), garlic powder, lemon juice or ground cumin to taste if necessary. Then scoop the hummus in a clean bowl, sprinkle with extra olive oil and serve.
