I had to toss this French potato salad together rather quickly.
Because there was a sudden change of dinner plans last Friday evening. We were supposed to go over to some friends for dinner. Sadly the host of our dinner party fell ill and he had to cancel our plans for that evening.
Damn, I was so looking forward to it!
Smoked Herring
So I made a quick stop at our local supermarket on the way home from work.
Credits for this lovely potato and smoked fish salad go to my husband who came up with this brilliant French salad idea after stopping the fish department.
Smoked herring is just perfect to add some sort of protein to a quick meal. Add a bunch of cooked sliced potatoes and a simple mayo and fresh dill dressing.
And that is it, easy but delicious.

So yes, this French potato salad recipe below is based on another French classic dish.
The French called it ‘harengs pommes à l’huile’ or ‘herring with potatoes in oil’.

Easy French Potato Salad Recipe
My fresh and filling French potato salad recipe with smoked herring, cooked potatoes and a creamy mayonnaise and dill dressing...
- 12,5 oz waxy potatoes (350 g)
- 2 thick fillets smoked herring
- 1 tbsp mayonnaise
- 3 tbsp white wine vinegar
- ⅙ cup olive oil (40 ml)
- 1 small red onion chopped finely
- 2 tbsp fresh dill chopped
- pepper
- salt

Peel the potatoes and slice them up. Don’t make them too thin. Then transfer the potato slices to a large saucepan and add water until they potatoes are submerges. Add a pinch of salt as well.

Place the pan over medium heat until boiling. Cook them until nearly tender. Keep an eye on them and check the tenderness regularly because if the potatoes are mushy, your salad will look awful. Once the potato slices are cooked, drain them and let them cool down fully at room temperature.

In the meantime dice the smoked herring up. Remove the skin if it is still attached.

Then in a small cup combine the mayonnaise, the white wine vinegar and the freshly chopped dill. Season with a little pepper and salt.

Stir in the olive oil until you get a runny dressing. Check the seasoning and add extra pepper, salt or vinegar to taste if necessary. Put the dressing aside until needed later on.

In a large mixing bowl combine the cooled potato slices and chopped red onion.

Stir and then add the diced smoked herring now. Pour in the fresh dill and mayo dressing.

Stir the salad well. Check the seasoning and add extra pepper, salt or vinegar to taste if necessary. Serve the salad at room temperature.
