I just love the sound of this chunky soup because it sounds so much better than a vegetable mince meal soup! Anyway, a meal it is.

Hamburger Soup with Barley, Pasta or Potatoes
You can replace the wheat berries by pasta or potatoes if you like.
I added wheat berries because I just happened to have a handful of pre cooked wheat in my pantry.
I also made this hamburger soup twice, once on the stove and a second time in my crock pot. And I loved both versions. The hubs preferred the stove top one because it is a tad crunchier.
He likes chunky soups with some bite to it.

However the crock pot version is just fab.
Because it is perfect if you don’t have a lot of time. Just fry off the beef and then throw it all in there. I can get on with other chores around the house and the reward is a steaming bowl of vegetable and beef tomato soup waiting for me!

Best Barley Hamburger Soup: The Crock Pot Recipe
A hearty and chunky hamburger soup with beef, tomatoes, fresh vegetables and wheat berries...
- 1 ⅓ lb ground beef (550 g)
- 5,5 oz canned chopped tomatoes (155 g)
- a handful wheat berries or pre cooked pasta
- 1 a handful onion chopped
- 1 small fresh tomato chopped
- 8 large green beans chopped
- 4 large garlic cloves chopped
- 1 large fresh carrot chopped
- 3 stalks fresh celery chopped
- 2 ½ cups chicken stock (600 ml)
- 2 tbsp worcester sauce or soy sauce
- 1 tbsp taco seasoning
- 2 bay leaves
- olive oil
- pepper
- salt
1) Pour a little olive oil in a non-stick pan and place it over medium-high heat. Then add the chopped onion and garlic.
2) Quickly stir fry them for a few minutes until a little soft. Then add the beef mince.
3) Fry the beef until it is cooked through. Break up any large lumps.
4) Once the beef is cooked, add it to the crock pot (you can drain off any grease if you want). Also add the remaining chopped vegetables, canned tomatoes, chicken stock, worcester sauce (or soy sauce), taco seasoning and bay leaves. Season with some pepper and salt.
5) Then cook the hamburger soup on LOW for 4 hours or HIGH for 2 hours.
6) Once the hamburger soup is ready, then add the wheat or cooked pasta and let the soup rest for another 5 minutes until the wheat or pasta is warmed through. Then check the seasoning and add extra pepper or salt to taste. Remove the bay leaves. Scoop the hamburger soup into bowls. Serve piping hot.

- a handful wheat berries or pre cooked pasta
- 1 medium onion chopped

2) Cook for 5 minutes until the onion starts to soften. Add the beef mince, taco seasoning and some pepper and salt.
3) Stir well and bake the mince for 7 to 10 minutes until it is cooked through. Break up any large bits. Add the canned tomatoes and bay leaves. Also pour in the chicken stock.
4) Then bring the soup to a boil and simmer it for 10 minutes. In the meantime peel the carrot and dice it finely. Also chop the celery, tomato and green beans. Add the vegetables to the hamburger soup.
5) Stir and cook for 30 minutes. Then add the pre cooked wheat (or pasta).
6) Cook the hamburger soup for another 5 minutes until the wheat or pasta is warmed through. Check the seasoning and add extra pepper or salt to taste. Remove the bay leaves. Scoop the hamburger soup into bowls. Serve piping hot.
