A gooey and rich creamy chicken tortellini stew…
How does that sound?
Vol au Vent
I used the basics of my chicken vol au vent stew to prepare my creamy chicken tortellini stew.
I first made a flavorful chicken broth from scratch using the classic bone-on skin-on chicken, some onion, peeled garlic and fresh carrots.
You can also add some fresh celery stalks if you like to make it extra flavorful.
Strain the lot and use the broth to make a roux based white sauce. That is the way to get the best flavor out of that chicken carcass!
Do try to make this fresh chicken stock, you definitely will not regret it.
Best Homemade Chicken Tortellini Stew
You can use whatever vegetables you want to this chicken tortellini stew.
I usually have a frozen colorful vegetable mix in my freezer that contains a bunch of green peas, carrots and green beans. And those veg are also the perfect companions for this freshly made creamy chicken tortellini stew.
I think even broccoli, spinach or bok choy would also add the necessary crunch to this chicken tortellini stew. Even Brussels sprouts perhaps. Or shredded green cabbage.
The Tortellini
What tortellini should you add?
Simple.
Choose whatever type of stuffed tortellini pasta that you want.
Do you want to add vegetable stuffed pasta or beef or cheese. Whatever you like, I am sure that it will taste great in this rich chicken tortellini stew!

Easy Chicken & Orzo Soup Recipe
That was a delicious chicken tortellini stew!
Let’s move on to another chicken and pasta recipe of mine.
We all need a good hot bowl of soup sometimes to fight a cold day or an off-day. A good soup like this chicken orzo soup below, you will admit this! I like soups for lunch but it often is a last minute decision in my kitchen.
So it has to be fast and quick soup to throw together. Preferably packed with a good portion of chunky ingredients.
Orzo Pasta
My husband is not a great fan of blended smooth cream soups. He still want some bite in it: beans, vegetables, meatballs, meat, pasta…
Preferably with a good handful of crunchy golden baked croutons!
So the other day I made him this great chunky soup for lunch! Chicken and pasta. No stuffed tortellini pasta this time but a type of thick rice grain shaped Greek pasta, called orzo. It is also called risoni sometimes, you might have heard about it.
Peas & Carrots
And here again I threw in some frozen carrots and peas as well in the end. That frozen vegetable mixture comes in very handy at times, especially when you need a quick meal.
So I plated up this chicken orzo soup and put it in front of hubs.
Yep, he liked it! A lot!
Enjoy!

- 1 large fresh chicken breast
- 3 medium garlic cloves chopped
- 3 bay leaves
- 3,5 oz Greek pasta (orzo) (100 g)
- 5,5 oz frozen peas and carrots (155 g)
- 1 chicken bouillon cube
- pepper
- salt
- Pour the water in a large and high pan and add the fresh chicken breast, chopped garlic cloves, bouillon cube and bay leaves. Season it all with a good dash of pepper.

- Remove the chicken using a slotted spoon and place it on a clean plate to cool down. You can leave the chopped garlic and bay leaves in the chicken soup if you like. Then pour in the orzo pasta.
- Bring the water to a good boil again and cook the orzo pasta until nearly tender (this will take about 5 to 7 minutes). In the meantime shred the cooled chicken breast up. Once the orzo pasta is nearly cooked, add the frozen peas and carrots to the soup.
- Stir and cook the soup for another 2 minutes. Then stir in the shredded chicken.
- Check the seasoning of the soup and add extra pepper or salt to taste if necessary. Scoop the orzo chicken soup into large bowls and serve piping hot.
Easy Chicken & Sweet Corn Soup Recipe
Well here is yet another chicken soup for you to try out!
And again, I am using a fresh chicken carcass to prepare a flavorful base for my dish, a sweet chicken corn soup. That is because I love making fresh chicken stock to use as a base for soups.
Fresh chicken stock is so much more flavorful and it is got this kind of natural fatty velvety feel to it when you eat it. But sure you can use chicken breasts too.
The base for the soup however will be much skinnier. You might as well have to add some extra crumbled chicken bouillon cubes to it to give the soup a more deeper flavor.
Fresh Chicken Stock
Once the freshly made chicken stock is ready, I like to leave the chicken carcass in the stock to cool down fully.
After that I pick the cooked chicken meat off the bones. It takes some time if you want to do it meticulously but you want all the inedible bits gone because cartilage or fatty chunks are quite unappetizing I think.
You would be surprised how much meat there is still left on a carcass! It provides enough protein for this soup, believe me.
Carcasses
My local supermarket always has fresh chicken carcasses for sale.
Those are very cheap in fact, but the main reason that I love to use them is for their natural flavor. But again, you can skip that first part and use fresh chicken breasts as well.
It is up to you.
My chicken tortellini stew and the chicken orzo soup above are quite creamy.
Cilantro
For this last chicken soup I decided to add some powerful ingredients and flavors. So I backed up the chicken and sweet corn soup with a bunch of freshly chopped cilantro and some spicy pickled jalapeño chilies.
Rich, spicy and zesty! I’m sure that you are going to love this next chicken and sweet corn soup…
Enjoy!
Easy Chicken & Sweet Corn Soup Recipe
Rich, spicy and zesty! I’m sure that you are going to love this next chicken and sweet corn soup...
- 1 fresh chicken carcass or 2 medium chicken breasts
- 3,5 oz canned sweet corn (100 g), drained weight
- 2 tbsp spicy pickled jalapeño chilies sliced
- a handful fresh cilantro chopped
- 1 cup cream (240 ml)
- 2 sprigs fresh rosemary
- 2 bay leaves
- 3 garlic cloves
- pepper
- salt
1) Are you using a fresh chicken carcass? Then chop it into smaller bit. Place the carcass or chicken breasts in a large and high pan. Add 4 cups (960 ml) of cold water, the bay leaves, rosemary sprigs and garlic cloves. Season with a good pinch of salt and pepper.
2) Place the pan over high heat until boiling. Then urn the heat lower and simmer the chicken (carcass) for about 45 minutes. Take the pan off the heat and let the cooked carcass or chicken breast cool down in the chicken stock for another 30 minutes. Then pour the stock and everything with it through a fine sieve. You can place a clean kitchen towel or cheese cloth in it to catch the gritty stuff coming from the bones.
3) Place the cooked chicken carcass or breasts aside to cool more until it is cool enough.
4) Shred the cooked chicken meat with your fingers or pick it off the carcass.
5) Reheat the sifted chicken soup and pour in the cream.
6) Add the sweet corn, the (shredded) chicken meat, the pickled jalapeños and the the freshly chopped cilantro as well.
7) Check the seasoning of the chicken soup and add extra pepper or salt to taste if necessary. Take the chicken soup off the heat and scoop it into bowls. Serve hot.
So yummy! We never had tortellini this way before, and we love how you smothered them into this flavorful sauce. We’d only add a dash of Moschofilero as well;) Exceptional work dear June, thank you for another delicious dish!
