So I made this lush and classic veal osso buco for Easter lunch… And of course I made way too much of that delicious.
And the leftovers ended up in my fridge as usual.
I hate throwing away food and that made me a leftovers specialist! So I decided to revive that lovely chilled tomato sauce, shred the cooked veal into bits and turn it all into a delicious chunky leftover osso buco soup!
Best Leftover Osso Buco Soup
With white beans this time, an ingredient that the hubs adores.
Besides I always have white beans in my pantry just in case. He also told me that this soup kind of resembled a Hungarian goulash soup. Minus the bell peppers and potatoes then.
You can use any type of tomato meat stew, whether it has got chicken, pork, lamb or any other type of protein in it.
I also prepared this osso buco soup in my KitchenAid Cook Processor but a simple large and high pan will also do of course!

Best Italian Leftover Osso Buco Soup Recipe
Leftover osso buco stew in the fridge? Make this heartwarming leftover osso buco soup the day after and enjoy this veal classic twice!
- 10,5 oz leftover osso buco with sauce (300 g), boneless
- ½ cup beef stock (120 ml)
- 2 tbsp onion chopped
- 2 tbsp fresh carrots chopped
- 1 medium fresh tomato
- 1 large garlic clove chopped
- 4 tbsp canned chopped tomatoes
- 4 tbsp canned white beans
- 3 tbsp olive oil
- pepper
- salt
1. Tear the leftover osso buco meat into smaller bits.
2. Pour the olive oil in a large and high pan and add the chopped onion, carrots, fresh tomato and garlic.
3. Place the pan over medium high heat until the oil is hot and gently bake the vegetables in the oil for 3 minutes. Then add the osso buco meat and sauce, the canned tomato and beef stock.
4. Turn the heat high and bring the soup to a good boil. Turn the heat low then, put a lid on the pan and let the osso buco soup simmer for 15 minutes. Then add the canned beans.
5. Stir and let the beans warm through in the soup for 5 more minutes. Check the seasoning of the osso buco soup in the end and add extra pepper or salt to taste if necessary.
6. Then scoop the osso buco soup into bowls and serve hot.

I didn’t prepare the initial osso buco stew in my KitchenAid Cook Processor because I wanted the shanks and their typical bones in the middle to stay in one piece. But the soup is just perfect for my fantastic machine!

3. Close the lid and select BOIL P3. Press Start to activate Step 1. After that, add the osso buco meat and sauce, the canned tomato and beef stock.
4. Close the lid again and press Start to activate Step 2. Then after that, add the canned beans.
5. Close the lid and press Start to activate Step 3. Once the program has finished, press Cancel to exit the keep warm mode. Then check the seasoning of the osso buco soup and add extra pepper or salt to taste if necessary.
6. Scoop the osso buco soup into bowls and serve hot.
