A heavenly fresh and crunchy green pea, mint and bacon salad always cheers me up! Yumm, there is something about green peas and mint that I really can’t resist.
And I am sure I’m not the only one here, right.
Whenever I put this salad on the dinner table, not a crumb is left behind.
I think that it is because green peas, mint and bacon are just made for each other!
Flavor Combo
My little mint forest in my outside herb garden has grown quite a bit over the last week without me realising it. So as soon as I saw that, I started to incorporating fresh mint in almost all of our lunches and dinner meals.
And nope, I am still not sick of it yet though… Neither do I hear any complaints on the other side of the dinner table.
So I guess that I will just go on and on until someone starts complaining about it.
Lol.

And let’s not forget the crunchy onion I add to the salad in the end! That together with a good dash of pepper, salt and a good quality olive oil… That is absolute heaven right there on your dinner plate.

Easy Minty Peas And Bacon Salad Recipe
Sweet green peas, salty crisp bacon, crunchy onion and fresh mint leaves... This peas and bacon salad is a great side dish for steak!
- 2 slices salted bacon
- 6 oz frozen green peas (170 g)
- 2 tbsp onion chopped
- a handful fresh mint
- 1 tbsp white wine vinegar
- olive oil
- pepper
- salt

Slice the bacon up into smaller strips and transfer them to a non-stick pan. Don't add any butter or oil yet.

Place the pan over medium-high heat and fry the bacon for 4 minutes until cooked and almost crisp. Add the frozen peas and a little drop of olive oil to the hot pan. Then turn the heat to medium-low.

Stir fry the bacon and peas for about 3 minutes until the peas are cooked through. Also add the chopped onion. Season with a little pinch of pepper and salt to taste.

Cook the peas and bacon for another 3 minutes. Keep the onion crunchy though. Then add the fresh mint.

Stir well. Also add the white wine vinegar now.

Take the pan off the heat and stir all the ingredients well. Then check the seasoning of the peas and bacon and add extra pepper or salt to taste. Transfer them to a serving bowl. Drizzle with extra olive oil to taste. Serve the peas and bacon lukewarm or at room temperature.
