    This is a quick and easy recipe for rustic homemade pickles, a great match for pork roast or cheddar cheese!

    I am fond of anything pickles.

    Honestly, when I am not feeling too well and my stomach is turned upside down, a spoonful of pickles is the best medicine ever.

    But how about making pickles myself?

    I have made piccalilly from scratch before and it was amazing.

    But because I can’t find any raw silverskin onions here in Spain I stared thinking about a shortcut.

    And that is how I came up with this quick and easy piccalilly recipe that contains pickled gherkins and silverskin onion, raw cauliflower and a bunch of flavorful spices.

    This one is ready in 30 minutes!

    I made this recipe in my KitchenAid Cook Processor but a large saucepan will also work of course, same method goes for both recipes!

    Ingredients
    • 6 oz small cauliflower florets (170 g)
    • 3,5 oz pickled silverskin onions (100 g)
    • 3,5 oz pickled gherkins (100 g), sliced
    • ½ cup white wine vinegar (120 ml)
    • 1 cup vegetable stock or water (240 ml)
    • 1 tbsp caster sugar
    • 2 tsp ground turmeric or curcuma
    • 1 tsp strong mustard
    • 1 small garlic clove peeled
    • 4 small bay leaves
    • 1 tbsp fresh ginger grated
    • 1 tbsp cornstarch
    • ground cinnamon
    • 1 tbsp unsalted butter
    • 2 cloves
    • pepper
    • salt
    Instructions
    1. 1. Add the cauliflower florets, silverskin onions, sliced pickled gherkins, bay leaves, garlic clove and cloves to a large saucepan.

    2. 2. Then add the mustard, grated ginger, ground turmeric (or curcuma), caster sugar, butter and a pinch of cinnamon. Season with a dash of pepper and salt.

    3. 3. Pour in the vegetable stock (or water) and the white wine vinegar.

    4. 4. Place the pan over medium-high heat and bring the ingredients to a good boil. Put a lid on the pan and let it all cook for about 10 minutes. Then add the cornstarch to the pan.

    5. 5. Stir and cook the piccalilly for another 5 minutes or until it has thickened a bit. Stir regularly. Then take the pan off the heat and let the piccalilli cool down a little.

    6. 6. Scoop the piccalilly pickles into a sterilized jar or container and seal it once the pickles has cooled down completely. I prefer to let the pickles marinate for at least one week before opening. Once opened, store the jars in the refrigerator for up to 3 weeks.

    Easy Homemade Piccalilly Recipe

    Here is how to prepare this piccalilly recipe in the KitchenAid Cook Processor then!

    This homemade piccalilly is not entirely from scratch. I could not find any raw cucumber and silverskin onions so I used the pickled version instead. Which again makes it very easy to prepare this quick piccalilly!

    I once made piccalilly from scratch long time ago.

    I let the raw silver skin onions, cucumber and cauliflower florets soak in a bunch of coarse salt overnight. That is the only difference. The rest of the ingredients stay the same really, only the cooking time is just a tad longer.

    I prepared this delicious pickle sauce in my KitchenAidCook Processor.

    But I did adapt the cooking time of the STEW program that I am using here to make sure that the cauliflower stays crunchy.

    It is up to you if you cook it a little longer or not.

    4. 4. Close the bowl of the Cook Processor and select STEW P11. Press Start to activate the program. After Step 1, add the cornstarch to the bowl.

    5. 5. Close the lid and adjust the cooking time of Step 2 to 5 minutes (instead of 15 minutes). Press Start to activate Step 2. Once the program has finished, press cancel to exit the keep warm mode. Then let the warm piccalilly pickles cool a little.

    Making this piccalilli pickles was so much fun!

    This is a quick and easy recipe for rustic homemade pickles, a great match for pork roast or cheddar cheese!

    But it is not the first time that I try my hand at making something like this.

    Another delicious topping that you should definitely try out is my 5 minute sweet pickle relish

    Yes, that one is even easier to make.

    Because there is absolutely no cooking involved whatsoever! All you need is a good blender. Put all the ingredients in it and give it a good blitz.

    I love the cinnamon flavor in that sweet relish.

    And therefore I would also serve it with cheddar cheese, I think that it is a good match as well.
