That creaminess is there because of what is inside the prawn heads.
Right.
Don’t let that put you off though. I know people tend to say that it is brains, or even intestines. I just don’t go there. We are here for flavor, not for a biology lesson.
It is also an amazingly light soup.

Best Soba Noodle & Prawn Head Soup Recipe
Let me show you what a creamy prawn head soup you can make with them! You will love it.
- 8 to 10 raw prawn heads and shells
- 4,5 oz dry soba noodles (125 g)
- 4 cups water (960 ml)
- 1 small fresh tomato chopped
- 1 large garlic clove chopped
- ¼ fish bouillon cube
- small chunk fresh ginger
- 1 tsp tomato paste
- ½ small onion chopped
- 1 star anise
- 3 tbsp olive oil
- ½ tsp chili powder or chili paste
- salt
- Add the fresh ginger (no need to peel it), star anise and chopped garlic and onion to a large casserole. Drizzle with the olive oil.
Place the casserole over medium heat. Gently fry the ingredients for 3 minutes. Then add the prawn heads and shells.
Add the water, fish bouillon, tomato, chili powder (or chili paste) and tomato paste.
Bring the prawn soup to a boil. Then turn the heat lower and simmer for 20 minutes. Take the soup off the heat and let it cool down.
Then blend or mix the prawn soup until the ingredients are turned into a fine pulp. Pour the soup through a fine sieve (you can place a cheesecloth in it as well) over another large casserole and stir it until you end up with the shrimp pulp. Press well using the back of a spoon to get as many liquid out of it as possible.
- Discard the pulp. Place the sifted soup back over medium heat. Check the seasoning and add extra chili powder or paste and fish bouillon to taste. Once the soup is warm, add the soba noodles and cook them for 3 minutes until tender.
- Then scoop the noodles and prawn head soup into large bowls. Serve hot.

Let me show you what a creamy prawn head soup you can make with them! You will love it.
- 8 to 10 raw prawn heads and shells

- 1 large garlic clove peeled
- ¼ fish bouillon cube
- small chunk fresh ginger
- 1 tsp tomato paste
- ½ small shallot peeled
- 1 star anise
- ½ tsp chili powder or chili paste
- salt
- Insert the MultiBlade into the bowl and add the prawn heads and shells, water, tomato, garlic, fish bouillon cube, ginger, tomato paste, shallot and star anise. Season with a good pinch of pepper.
- Close the lid and remove the measuring cup. Select BOIL P1 and press Start to activate the program. After that, press cancel to exit the keep warm mode. Remove the lid and let the mixture cool down a little for 10 minutes.
- Then put the lid back on and place the measuring cup back. Press Pulse for 30 seconds and blend the prawn soup until all of the ingredients are turned into a fine pulp. Pour the prawn soup through a large and fine sieve (you can place a cheesecloth in it as well) over another large casserole and gently stir the soupy pulp until you end up with a slab of shrimp pulp. Press it well using the back of a spoon to get as many liquid out of it as possible.
- Discard the pulp. Rinse the Cook Processor bowl and replace the MultiBlade with the StirAssist. Pour the sifted prawn soup back in. Check the seasoning and add extra chili powder or paste and fish bouillon to taste if necessary. Set the timer at 5 minutes and select 100°C. Press start. Once the soup is warm, press cancel to exit the keep warm mode. Add the soba noodles.
- Let them soak in the soup for 3 minutes or until tender. Then scoop the noodles and prawn head soup into large bowls. Serve hot.
Can you really eat prawn heads?
Yes, you can eat prawn heads.
In many cultures they are considered a delicacy. The heads of prawns are full of flavorful juices and quite tasty when cooked properly.
Some people prefer to remove the heads before cooking and others enjoy eating them whole.
However it is worth noting that the heads of prawns may contain the digestive tract, which is the part of the prawn that processes food.
Some people find this unappetizing and choose to remove the digestive tract before eating the prawn head. To do this, simply use a small knife to make a shallow cut along the underside of the head and remove the digestive tract using your fingers or the tip of the knife.
Allergies

So if you are unsure whether you have a shellfish allergy, it is best to avoid eating prawn heads altogether.
Are deep fried prawn heads delicious?
Absolutely, I often deep fry them as an appetizer!
Deep fried prawn heads are crispy on the outside and juicy on the inside, and the natural flavors of the prawn are intensified.
In many Asian countries deep-fried prawn heads are also considered a delicacy and are often served as a snack or appetizer.
To prepare deep fried prawn heads, dredge them in seasoned flour or cornstarch and deep fry them until they are crispy and golden brown. Season with salt, pepper or other spices.
Deep fried prawn heads may be high in cholesterol and calories, so they should be enjoyed in moderation as part of a balanced diet.
