I admit: I am not very good at making desserts.
Dessert Duty
So when I am in charge of the dessert part for dinner with friends, I try to keep it very simple and easy because I like to go for a dessert that is safe and won’t fail.
A good example of such a dessert is this very simple creation: my strawberry yogurt panna cotta sprinkled with fresh pomegranate seeds and lemon melissa.
Strawberry Yogurt Panna Cotta with Pomegranate
You might think: panna cotta is quite a tricky dessert!
Well if you do it right, then you are good. It is all in the ratio of the ingredients. Just stick to the recipe because you will see how easy it is.

I first thought I would make a kind of syrup with the pomegranate but in the end I dismissed that idea and simply sprinkled the panna cotta with the seeds.
I liked the crunch it added to the creamy panna cotta!
Syrup
The panna cotta is very creamy already so actually I was happy that I didn’t waste any time trying to make that syrup. And it looked just fine, a couple of fresh green leaves to garnish it.
Done.
Do you know the herb lemon melissa? It kind of resembles mint, but it has an ever fresher taste and is very lemony but not overpowering at all.
Can’t you find lemon melissa?
Then you can also replace it by fresh mint leaves of course.

Best Strawberry Yogurt Panna Cotta Recipe
- 7 oz strawberry yogurt (200 g)
- ⅙ cup pomegranate juice (40 ml)
- ½ cup cream (120 ml)
- 1 sheet gelatin (or ¼ envelope or ¼ tbsp granulated gelatin)
- 1 oz caster sugar (30 g)
- 2 tbsp fresh pomegranate seeds
- 10 leaves fresh mint or lemon melissa
- 2 drops vegetable oil
- Lightly grease 2 small bowls with some vegetable oil. Soak the sheet of gelatin in some cold water for 15 minutes until soft (if using).
- Then add the cream, the pomegranate juice, caster sugar and the strawberry yogurt to a large saucepan.
- Place the pan over medium heat. Don’t let the ingredients boil: keep it close to a simmer for 5 minutes. Then squeeze the gelatin out very well and add it to the saucepan (if you are using granulated gelatin, sprinkle it on top of the warm yogurt mixture).
- Stir well and keep the mixture over medium heat for another 2 minutes. Then take the pan off the heat and pour the warm strawberry panna cotta mixture in the greased bowls. Place them immediately in the fridge. Leave the panna cotta to set in the fridge for at least 4 hours (I sometimes leave them there overnight). Then run a sharp knife along the sides of the panna cotta. The panna cotta should easily come away from the edges if you greased the bowls well. Then place a plate on top of the bowls and turn them over. Sprinkle the panna cotta with the pomegranate seeds and the fresh melissa or mint. Serve.

- Close the lid and remove the measuring cup. Select STEW P1 and press Start to activate the program. After that press cancel to exit the keep warm mode. Squeeze the gelatin out very well and add it to the bowl (if you are using granulated gelatin, sprinkle it on top of the warm yogurt mixture).
- Close the lid again. Set the speed to 2 and leave to machine to run for 2 minutes. In the meantime lightly grease 2 small bowls with some vegetable oil. Then pour the warm strawberry panna cotta mixture in the bowls and place them immediately in the fridge. Leave the panna cotta to set in the fridge for at least 4 hours (I sometimes leave them there overnight). Then run a sharp knife along the sides of the panna cotta. The panna cotta should easily come away from the edges if you greased the bowls well. Place a plate on top of the bowls and turn them over. Sprinkle the panna cotta with the pomegranate seeds and the fresh melissa or mint also. Serve.
