Here is my summer salad recipe, a fresh and freaking delicious salad for a quick lunch or a light and flavorful summer dinner!
First of all, before we start off with this recipe.
I know that this summer salad recipe might look very much like a classic Greek salad, I totally agree. But then instead of buying and adding the usual black olives, this time I decided to add something else instead.
Greek Flavors
A handful of salted capers in brine that I still had in my fridge after making a classic steak tartare the other day. Because I just thought that these capers would give this salad an extra flavor punch.
That together with the fresh herbs that I used. A handful of fresh basil and some delicious fresh mint that came straight out of my outside little herb garden.
No fresh herbs in your garden or pantry?
Then a simple sprinkle of dried oregano or herbs will also do of course!
Easy Summer Salad Recipe with Manouri
Manouri?
What is manouri?
Have you heard of manouri before? Can you find it around where you live?
The most obvious choice for this mediterranean inspired summer salad recipe would obviously be a Greek feta cheese of course. However I couldn’t find any in my supermarket this morning. So then I had to go find a worthy alternative.
And that’s when I stumbled upon this manouri cheese.

I googled it first to see what it really was like.
And I was pretty sure that it would be a great substitute for the feta cheese.
Greek manouri cheese is a sheep’s milk cheese that is quite similar in taste and texture. Which makes it also perfect for my summer salad here!

Easy Summer Salad Recipe
- 1 large fresh cucumber
- 7 oz cherry tomatoes (200 g)
- 3,5 oz feta cheese (100 g)
- dried herbs or fresh herbs
- 3 tbsp capers in brine
- good quality olive oil
- pepper
- salt
- Wash the cucumber well and chop off both ends. Cut the cucumber lengthwise in half and then slice it up using a sharp knife of a mandoline slicer like I did. Add the cucumber to a large mixing bowl.
Rinse the cherry tomatoes. Pat them dry with a clean kitchen towel and slice the tomatoes in half. Then add them to the bowl with cucumber. Chop up the fresh herbs you've chosen for this recipe and add them to the sliced vegetables.
Add the salted capers together with a little splash of good quality olive oil. Season with a little pepper and salt.
Stir well and then check the seasoning. Add extra pepper or salt to taste if necessary. Chill the salad in the fridge for 10 minutes. Transfer it onto deep plates or bowls. Garnish with some crumbled feta cheese. Finish with a little sprinkle of olive oil and some freshly ground black pepper. Serve cold.
