Actually most of them are ingredients that you use almost daily, I’m sure about that. Fresh chicken, eggplant and bell pepper. Those are the main things that you need.

I love the subtle flavor of fish sauce for instance. And then also the tacky umami richness of oyster sauce. I use bother very often in my kitchen!
Easy Thai Chicken Stir Fry
Right, what Asian condiments do we need here for our Thai chicken stir fry?
Lime juice for instance, or lemon juice if you like. However I prefer lime juice because it’s got something so concentrated, much more than lemon juice. It’s up to you.
And then soy sauce! That one should not be too hard to find.
A favorite of mine, fish sauce! Now that one might be more difficult. If you can’t find it, just leave it. The soy sauce is salty enough already.
Sugar
Believe it or not: sugar! A very important ingredient in Thai cuisine. I love to use palm sugar, but dark brown sugar is also a good alternative.
We’re almost at the end of our list.
Chili sauce of course, to give this dish the necessary spiciness.
And last but not least: garlic paste. Or use freshly mashed garlic that you mash up finely under the blade of your knife.
Done. Toss it all together, plate it up and enjoy.

Easy Thai Chicken Stir Fry Recipe
Right well look here at this Thai chicken stir fry then. See how easy it really is to cook an Asian flavored dish! No funny ingredients involved.
- 10,5 oz fresh chicken breast (300 g), diced
- 1 small fresh eggplant chopped
- 1 eggplant red bell pepper chopped
- 2 tsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp lime juice or lemon juice
- 2 tsp palm sugar or brown sugar
- 1 tbsp vegetable oil
- 1 tsp hot chili sauce
- 2 tsp garlic paste
- a handful fresh mint

Combine the fish sauce, soy sauce, lime juice and (palm) sugar in a small cup or glass and whisk well.

Pour the vegetable oil in a large non-stick pan and then add the garlic paste.

Place this over medium-high heat until the oil is hot and gently fry the garlic for a minute. Then add the diced chicken breast.

Stir fry the chicken for 2 minutes and then add the diced eggplant.

Cook for 3 more minutes. Then pour in the soy sauce mixture.

Stir fry the ingredients for 2 minutes. Now add the the sliced bell pepper.

Stir well and cook the chicken and vegetables for another minute. Add the freshly chopped mint right in the end.

Then take the pan off the heat and stir well. Check the seasoning and add extra soy sauce, fish sauce, lime juice or sugar to taste if necessary. Transfer the stir fry onto plates and serve immediately.
