Avocados are always great for lunch.
Do you like avocados?
I am fond of them!
However it wasn’t always like that.
The avocados that I bought before years ago were not good.
I still remember buying a couple of them. Once I got home I tried them. And boy, I wondered why everyone was so excited about it.
The avocados were, or as hard as a stone, or downright mushy and full of spots on the inside. And the flavor? What flavor? There is more flavor in a pebble. And don’t even get me started about their texture.
I really didn’t get it.
Until I moved to Spain a couple of years ago.
And I tried avocados again. Now I know what it is all about. What a delicious gem! Ever since then, I always have an avocado in my fruit basket at all times.
Easy Stuffed Avocado with Tuna Salad
One of my favorites and most popular avocado recipes here on my blog is a classic guacamole of course.
And so is this tuna salad stuffed avocado by the way. I usually pimp the tune salad with some freshly chopped cilantro and any fresh vegetables that I have laying around in my pantry that very moment.
This time I went for diced tomato, cucumber and crunchy red onion.
Make sure that the avocado you are about to use is not too mushy on the inside when you gently squeeze it.
Just somewhere in between firm and mushy.
If I leave them out for too long and they are too soft I usually make a sandwich spread with it.
Or I just simple plaster the ripe avocado meat straight on a slice of grilled bread, add a sprinkle of pepper and salt, a couple of drops of good quality olive oil.
And we are ready.

Best Tuna Stuffed Avocado Recipe
Lovely lunch idea, this tuna salad stuffed avocado with cilantro!
- 1 large ripe avocado
- 1 tbsp fresh cucumber diced finely
- 3 tbsp canned tuna
- 1 tbsp fresh tomato diced finely
- 1 tbsp red onion diced finely
- a pinch garlic powder
- 1 tbsp fresh cilantro chopped finely
- 1 tsp olive oil
- Slice the avocado lengthwise in half and remove the large seed inside.
Then place the 2 halves back on each other to prevent the avocado from discoloration. Put the avocado aside until needed later on. Add the canned tuna to a medium mixing bowl. Add the diced red onion and a pinch of pepper and salt.
- Stir and add the freshly chopped cilantro.
- Stir again. Now add the diced cucumber, the garlic powder and the olive oil.
- Stir again. Add the diced tomato.
Stir the tuna salad well. Check the seasoning and add extra pepper or salt to taste if necessary. Place the 2 avocado halves next to each other on a clean plate and fill them up with the tuna salad. Serve cold.
