Beer Cheese Soup with Potato & Ham

A creamy potato and cooked ham soup!

Ingredients

  • 5,5 oz cooked ham (155 g), diced
  • 1 cup pilsner beer (240 ml)
  • 1 ½ cup chicken stock (240 ml)
  • a handful cheddar cheese grated
  • 1 cup cream (240 ml)
  • 1 small onion chopped
  • 2 medium garlic cloves chopped
  • 1 large potato diced finely
  • 2 bay leaves
  • 1 sprig fresh rosemary
  • 2 handfuls fresh chervil chopped
  • 2 tbsp unsalted butter
  • pepper
  • salt

Instructions

  1. Add the unsalted butter to a large saucepan and place it over medium heat until melted. Then add the chopped onion and garlic, bay leaves and rosemary.

  2. Stir well. Cook the onion and garlic for 3 minutes. Then add the diced potato.
  3. Stir again. Cook the potato for about 4 minutes. Then add the chicken stock and beer. Season with pepper and salt.

  4. Cover the pan and cook the ingredients over medium heat for about 10 minutes. Then take the pan off the heat, remove the rosemary and bay leaves and blend or mix it into a fine soup.

  5. Add the cream, cooked ham and grated cheese.

  6. Place the soup back over medium heat until boiling and cook it for another 5 minutes. Then check the seasoning and add extra pepper or salt to taste if necessary. Stir in the chopped chervil.

  7. Then take the soup off the heat again and scoop it onto large bowls. Serve hot.
