Ingredients

  • 10,5 oz fresh chorizo sausage (300 g)
  • 1 cup apple cider (240 ml)
  • 2 tbsp olive oil
  • a handful fresh parsley
  • 1 small garlic clove chopped
  • pepper
  • salt

Instructions

  1. Pour the olive oil in a medium non-stick pan, add the chorizo sausage(s) and place it over medium-high heat. Pan fry the sausage on both sides for about 7 minutes until nicely browned.

  2. Gently fry the garlic in the chorizo oil for 2 minutes. Then add the chopped garlic and half of the apple cider. Season with a little pepper.

  3. Put a lid on the pan and let the cider sauce simmer until it has reduced by half. Remove the sausage from the pan and slice it into bite-size pieces. Add them back to the hot pan pour in the rest of the apple cider.

  4. Cover the pan again and let the cider reduce a second time. Then take the pan off the heat and check the seasoning. Add extra pepper or salt to the sauce to taste if necessary.

  5. Pour the sliced sausage in a shallow serving dish and drizzle with the remaining cider sauce. Then sprinkle with the freshly chopped parsley and serve hot.
