Ingredients

  • 10,5 oz fresh chorizo sausage (300 g)
  • 1 cup apple cider (240 ml)
  • 2 tbsp olive oil
  • a handful fresh parsley
  • 1 small garlic clove
  • pepper
  • salt

Instructions

  1. Pour the olive oil in a medium non-stick pan, then add the chorizo sausage(s) and place it over medium-high heat until the oil is hot.

  2. Bake the sausage in the hot pan on both sides for about 5 minutes until nicely browned.

  3. Then peel the garlic clove and chop it up finely. Add it to the sausage in the pan.

  4. Gently fry the garlic in the chorizo oil for 2 minutes. Then pour in half of the apple cider. Season with a little pepper.

  5. Put a lid on the pan and let the cider sauce simmer until reduced by half. Then remove the baked sausage from the pan and transfer it to a clean chopping board. Slice the sausage up into bite-size pieces and add them back to the cider sauce in the hot pan.

  6. Stir well again and pour in the rest of the apple cider.

  7. Cover the pan again and let the cider reduce a second time. Then take the pan off the heat and check the seasoning. Add extra pepper or salt to the sauce to taste if necessary.

  8. Pour the sliced sausage in a shallow serving dish and drizzle with the remaining cider sauce. Then sprinkle with the freshly chopped parsley and serve hot.
