Ingredients

  • 6 thin slices salted bacon
  • 14 oz potatoes for mash (400 g)
  • 1 small garlic clove
  • 2 tbsp unsalted butter
  • ¼ cup whole milk (60 ml)
  • pepper
  • salt

Instructions

  1. Peel the garlic clove. Peel the potatoes, rinse them well under cold running tap water and chop them up into smaller chunks. Add them together with the peeled garlic clove to a large saucepan and add as much cold water until the potatoes are fully submerged.

  2. Season with a good dash of salt. Place the pan over high heat and bring the water to a rolling boil. Then turn the heat lower again and gently cook the potatoes for about 10 minutes or until tender. In the meantime place the slices of bacon on a large baking tray.

  3. Grill the bacon for some minutes until crisp. Keep an eye on it! Then let the grilled bacon cool at room temperature. Once the potatoes are cooked and tender, drain them. Immediately add them back to the pan and add the butter. Mash the potatoes and garlic up well.

  4. Then also pour in the whole milk. Season the mash with a dash of pepper and salt.

  5. Mash the potatoes again. Then chop the cooled bacon up roughly and add it to the potato mash.

  6. Stir the mash well again. Check the seasoning and add extra pepper or salt to taste if necessary. Scoop the bacon mash into bowls and serve hot.
