Grilled zucchini roll ups with mozzarella and fresh basil, another quick appetizer that came out of a couple of leftovers I flung together in a hurry!
These lovely little colorful parcels are a delicious finger food as well.
Roll up the ingredients until you end up with a couple of nice little parcels.
Then plunge a skewer through them once they are grilled and you got the most amazing and fast appetizer ever. I served them for lunch though with a crisp green salad on the side.
And it was great.
Easy Zucchini Roll Ups with Bacon & Mozzarella
This is also a lovely and fun little appetizer that you can make with kids by the way!
And it is pretty straight forward.
You can prep, dice and slice all of the ingredients and then let the kids assemble the roll ups for you. Kids love to get their hands dirty in the kitchen, especially when they know that they can eat the treats later on.
Make sure to slice the fresh zucchini very thinly.
Because otherwise it will be too tough to eat and not cook evenly.
The bacon underneath will also cook much faster as well if the zucchini is thinner. I used mandoline slicer for that.

Easy Zucchini Roll Ups with Bacon & Mozzarella Recipe
Here is a super quick and easy grilled appetizer for you to try out this summer: zucchini roll ups with mozzarella, bacon and fresh basil!
- 1 small fresh zucchini
- 5,5 oz mozzarella (155 g)
- 10 thin slices salted bacon
- a bunch fresh basil
Rinse the zucchini and pat it dry with a clean kitchen towel. Slice the zucchini lengthwise into very thin slices because it will cooke faster. I used a mandolin slicer for this. You should have 10 nice and even slices in the end for this recipe. Then place the zucchini slices on a clean chopping board and sprinkle with some pepper. Place some fresh basil leaves on top.
Then cover the zucchini with a slice of the salted bacon.
Cut the mozzarella into even pieces that are more or less the same width as the zucchini slices. Then place a chunk of mozzarella and another fresh basil leaf on top of the bacon and zucchini. Sprinkle with extra pepper.
Carefully roll every zucchini slice up. Make sure that the mozzarella is wrapped tightly. You can secure the rolls with a toothpick if necessary.
Then transfer the parcels to a baking tray and grill them under a hot grill for a couple of minutes until the zucchini is soft and the bacon is cooked through. Remove the rolls from the grill and place them on a serving dish. Sprinkle with extra pepper and serve hot.
